 We don't just love to hunt and fish, we live off of the animals and fish we harvest. We have replaced beef, chicken, and super market fish with elk and deer, pike, walleye, and perch,  and grouse, pheasant, and huns. We love to cook so here are some WILD Recipes from Northern Idaho!

Dutch Oven Roast Dinner - January 18, 2009

Dutch Oven Roast Dinner is a recipe we learned from our good friends Brent and April over in Clark Fork Idaho.

1 - Big Game Roast ( this can be elk, deer, bear, or moose)
2 - cans of beef broth
carrots
celery
potatoes
mushrooms
onions
Garlic

Start by getting your Dutch oven heated up we suggest a bricket starter to light the brickets, and use Kingsford brickets or another high-end brand, cheap brickets will not work very well for this.

We use a rub for the meat for seasoning a mixture of garlic salt, thyme, basil, paprika, black pepper, and cayenne pepper if you like a little kick. Mix these seasons together and rub them into the meat.

Next use a knife and cut holes big enough for a garlic clove to be inserted, insert several cloves throughout the piece of meat. Now you are ready to brown the meat, sear both sides to create a nice crust of flavor. Now add your onions and vegetables and 1 can of broth, now season the vegetables with the left over rub you made.

You can now put the lid on the Dutch oven and cover the top with brickets. This recipe will take about 2 1/2 hours to complete, but check about half way through and you may have to add some more broth if necessary.
